  1. In a large bowl, combine rolled oats, granola, peanut butter, honey or maple syrup, chocolate chips (if using), vanilla extract, and a pinch of salt.
  2. Mix everything together until well combined.
  3. Place the mixture in the refrigerator for about 30 minutes to firm up.
  4. Once chilled, remove the mixture from the refrigerator and roll into bite-sized balls using your hands.
  5. If desired, roll the energy bites in additional granola or shredded coconut for extra flavor and texture.
  6. Place the energy bites on a baking sheet lined with parchment paper.
  7. Chill the energy bites in the refrigerator for another 15-20 minutes to set.
  8. Once chilled, the energy bites are ready to enjoy! Store any leftovers in an airtight container in the refrigerator for up to one week.
